I will hold further days in May to suit demand.Herbs are at their youngest and freshest at this time of the year. We will look at herbs which are easy to grow but hard to buy, including my favourite herb, lovage, as well as different types of sorrel, chervil and oregano. You will learn how to make herb soups, sauces, terrines, tarts and salads, as well as puddings flavoured with herbs. The rest of the six acre garden looks stunning in late May.
JUNE 9th and 11th - plus extra days if requested. We will look at light, healthy summer cooking, using herbs and their flowers when they are fresh and tasty. Recipes for sauces, soups, pesto, tapendades and delicious desserts will use my favourite herbs as well as salad herbs, wild herbs and edible flowers. The rose garden and the edible roses in the herb garden will be in full bloom. In fact June is the month when the whole of the six acre garden is at its most beautiful. You will learn how to sow interesting salad herbs for all-year picking, how to use my pudding bed herbs like sweet cicely and angelica for sweetening and flavouring food and how to harvest and preserve herbs when they are at their summer best.SPECIAL DAYS CAN BE ARRANGED FOR GROUPS OF GARDENERS OR FRIENDS IN MAY AND JUNE TO LEARN ABOUT HERB GARDEN DESIGN, HARVESTING, PROPAGATING, PLANTING, CUTTING BACK, IDEAL SOIL CONDITIONS AND STORING HERBS OVERWINTER - AS WELL AS TASTING MANY OF THE 150 DIFFERENT CULINARY HERBS IN THE GARDEN.
